(2-4) filets of salmon, 4 oz
Salt and pepper
1 tablespoon fresh dill weed
3 tablespoons mustard
? cup lemon juice
1 small clove garlic
2 tablespoons soy sauce
2 batches Herman T?s BBQ sauce
How you do it:
Make your Herman T?s sauce and set aside.
In a bowl, combine your lemon juice, mustard, dill, garlic and soy sauce and ? cup BBQ sauce and whisk together into a paste.
Season your salmon with salt and pepper and then brush your mustard and BBQ paste on each filet both top and bottom.
Heat your grill making sure you spray the surface with oil spray. Place your salmon on grill and let cook on one side for 5 minutes. Do not touch the fish for at least 5 minutes. This is the trick to keep the fish moist. After 5 minutes, turn your fish and cook on the other side for 3 more minutes. While cooking, baste the salmon with your remaining mustard BBQ mixture.
Remove the fish from the grill and finish in the oven for 5 minutes on 300 degrees.
Heat your remaining BBQ sauce (not basting mix) and pour over the fish. Serve with yellow rice and asparagus.
